Apple-Maple Jam

We got this homemade jam for Christmas, and it was so good I just had to find the recipe! I found it in the Ball Blue Canning Book. I made PP&J with it, put it on vanilla ice cream, and just ate it by the spoonful. Yummm.

  • 3 quarts of peeled, cored, chopped apples (about 6 lbs)
  • 5 1/2 cups of sugar
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1 cup maple syrup

Combine all ingredients in a large pot, and slowly bringĀ to a boil. Stir frequently in order to prevent sticking. Remove from heat, ladle into hot jars. Leave a 1/4 inch headspace and process for 10 minutesĀ in a hot water bath.
