Maple Blueberry Chia Seed Pudding
My second favorite food on Earth (maple is first obviously) is chia seeds! They are magical little seeds that expand like crazy and can turn any liquid into a pudding. They are also packed with fiber, with 10 grams in only 1 oz! I make an amazing chia seed pudding for breakfast, and it keeps you full for hours, which is the best.
- 1/4 cup plain Greek yogurt
- 1/4 cup almond/soy/coconut/cow milk
- 2 tablespoons chia seeds
- 1 tablespoon maple syrup
- 1/4 teaspoon vanilla extract
Whisk the above ingredients together and let sit for 20 minutes. After the chia seeds have puffed up enough to soak up the milk and turn it into a pudding-like texture, top with:
- 3/4 cup blueberries
- 1/4 cup almonds
Enjoy! This is very easy to make the night before, or make enough for a whole week of breakfast! You can change it up every day by adding different fruits and nuts!
