Milkweed Fritters
These milkweed fritters are one of my favorite things about summer. Made with maple sugar in the batter, and topped with maple cream, you can't go wrong!
CAUTION: Milkweed is poisonous unless properly prepared, so make sure to follow all of the steps closely!
Ingredients:
- 10 milkweed blossoms
- 1 egg
- 1 cup flour
- 3 tablespoons maple sugar
- 1/2 teaspoon cinnamon
- Pinch of salt
- Frying oil
Step 1: Bring milkweed flowers to a boil in water. Drain the water and repeat 2 more times to make sure all of the milkweed milk is gone from the flowers.
Step 2: Whisk egg and place in a bowl. In a separate bowl, combine the flour, maple sugar, salt and cinnamon.
Step 3: Dip flower blossoms in egg, and then coat with flour mixture.
Step 4: Heat oil over medium heat. Place coated blossoms in hot oil, and flip once they are brown.
Step 5: Let fritters dry on a paper towel. Serve with a side of raspberry jam and maple cream. Enjoy!
