Gingerbread Pancakes
Ingredients:
2 cups self-rising flour
1 tsp cinnamon
1/4 tsp ground nutmeg
1/2 tsp ground cloves
1/2 tsp allspice
1 tsp ground ginger
1 & 1/4 cups buttermilk
1/4 cup maple sugar (or dark brown sugar, packed)
1/4 cup melted butter
2 large eggs
1/4 cup molasses
Turn griddle on medium-high heat. In a bowl, mix flour and spices. In a separate bowl, whisk buttermilk, maple sugar, butter, eggs, and molasses. Mix with the dry ingredients. Grease hot griddle with butter, and spoon 1/4 cup of batter at a time onto the griddle. When the edges are dry and bubbly (about 2-3 minutes), flip and cook until browned. Serve with butter and maple syrup!
